this week, we have a very special, poison ivy covered guest: mary!
and we made mac n' cheese quiche.
crust: those sami's flax seed and garlic crackers.
filling: 1.5 cups brown rice elbow pasta with some earth balance and .5 cups almond milk placed on top of the crust with 5 eggs poured over that.
topping: cheddar and monteray jack cheese and rice bread crumbs sprinkled on top of that!
commentary: really good but rae didn't like the cracker crust, maybe a crumbling of crackers throughout or a layer of cheese on top of the crackers if they're laid on the bottom? it was a little dry over-all, so more liquid!
quote of the quiche: "i know where i'm gonna be every week!" - mary, talking about coming to quiche night...even though she only came that one time so far!! mary, come back!
