carolyn's belated birthday quiche / week 23 - 1/25/2010

wow. what a quiche. so much excitement.
It was Carolyn's birthday yesterday. We invited her and Blake over for quiche night (obviously everyone's favorite night). We played lots of exciting games. Spoons, "this is a spoon!", and every 12 year old girl's favorite game.... MASH. (if you want instructions let us know!!!)


We asked Carolyn what she wanted to make. Here's what she said:
"i'm up for anything that isn't blue. i guess i am a traditionalist. potato dill? sweet potato, brown sugar, and goat cheese?"
Sooooo, we had our assignment.

crust: the amazing quiche crust:
1 cup sorghum blend
1/4 cup almond flour
1/2 tsp xanthum gum
1/2 tsp salt
1/4 tsp sugar
5 oz cold butter
1 egg
1/2 T apple cider vinegar

mix all dry ingredients. ALSO: other flours work. like once i used millet and brown rice flour instead of sorghum flour. the almond is nice, but i'm betting it can be left out and replaced with another. i don't like white rice flour, but it's your choice...experiment and work with what you got)
then add the butter, egg and vinegar
mix well with your hands
and roll out on a flat, clean and flour dusted surface (a can/jar without labels is a good rolling pin replacement)
put in greased pan and bake at 375 until a little browned, 10 minutes-ish.

(TIP: if you are also making a crusted dessert (we made a marionberry crisp) then double the recipe, divide it up, roll them out seperately and you have two crusts!)

bottom layer: mashed sweet potato with a little butter or vegan substitute. we like earth balance.
filling: just 3 eggs! and 1/2 cup almond milk.
topping: goat cheese and sprinkled cinnamon and cane sugar.

note!!! be aware that the goat cheese will sink into the filling. but, that's ok. it's still great.

375 degrees for about 30 minutes.

i had a lasagna quiche/week #22 - January 18th, 2010



We had a rough time deciding what this weeks quiche would be. Until we remembered lizzie's amazing vegan lasagna in the fridge!

crust: lizzie's amazing vegan lasagna with spinach! just laid in the dish.
- brown rice noodle lasagna pasta, tofu and spinach and some nutmeg mixed in...just a pinch, shredded zucchini, tomato sauce, that vegan mozzarella that says it melts but doesn't really but is still good. layer and bake!
any lasagna will do.
filling: 3 eggs, 1/2 cup of almond milk and chopped, sauteed mushrooms with basil.
topping: mozzarella

baked at 350 for about 40 minutes.

kitsch quiche / week 21 - january 11th, 2009

for this quiche:

crust: boiled potatoe slices in cupcake tins
filling: sliced green olives, 3 eggs, 3/4 cup of milk, some drops of blue food coloring...
topping: pineapple chunks and cheddar cheese.

extra: tiny things

condiment: ketchup. organic is ok if you must... :)

SPECIAL EDITION: vegan quiche! / january 1st, 2010

so last week lizzie decided not to eat dairy anymore except for quiche night. of course.
but joanne had a good recipe for a vegan quiche so we gave it a shot!

crust: the same ol' new awesome gluten free crust recipe from last week
recipe: from a PETA cook book:

1 TBLS oil
1 medium onion, diced
1 bell pepper, chopped (red or orange looks nice!)
1 cup chopped broccoli
1 cup chopped mushrooms
1 lb of firm tofu
pinch of nutmeg
1/2 tsp tumeric
1 TBLS or more basil
1/2 tsp salt
pepper to taste
maybe a little oregano?
1/2 cup soy or rice milk

-Preheat oven to 425 degrees.
-Heat oil in a skillet and saute the onion, mushrooms, broccoli and
mushrooms until cooked, about 8-10 minutes.
-In a food processor, mix up the rest of the ingredients (tofu, spices and
"milk")
-Stir the veggies into the tofu mixture and then pour into crust
-Bake for 30 minutes

* I think the quiche tastes even better the next day after the flavors
have settled and done their magic.

it was really awesome. tofu is no egg, but it held it's own. thanks joanne!

the real deal quiche / week 20 - january 4th, 2010



we made an actual crust!
thanks to a recipe from a friend :)

crust:
1 cup sorghum blend

Note!: We also read one of the Sookie Stackhouse novels,"Club Dead". The books that the show "True Blood" is based on. And we....are avid true blood fans. It's true.

here is your quiche.

this is also an important week because we discover we can use less eggs and some milk and it makes it fluffier and better...something apparently everyone else already knew.

crust: potato latkes (in the future, fry them in small patties in small batches - so they get crispy - and not just all together.)
bottom layer: left over grits that were on the stove(made a nice addition!)
filling: sauteed spinach and mushrooms and garlic and three eggs and 1/2 cup of milk
cheese: cheddar.
just add salt and enjoy.

red beans and rice quiche / week 16 - december 7th, 2009

filling: five eggs with kidney beans - spiced before hand with cumin and red pepper (i think?) and veggie burger to act as sausage.
topping: cheddar!

walking taco quiche / week 14 - november 23rd, 2009

isaac/sarah's favorite things quiche / week 13 - november, 16th, 2009



a second appearance by isaac - a welcome surprise for some of us - and rae planned a great quiche that was a combination of his favorite things. and it happened to be sarah's favorite too!

before making the quiche we had to clean the oven because there was a rat hanging out in it for a while...and it smelled like rat pee...

crust: mashed sweet potatoes (a large boiled sweet potato, earth balance, salt and almond milk)
filling: 5 eggs, wilted spinach, black beans
topping: parmeasan and cheddar cheese (should have been goat, says isaac)

it was a great crowd pleaser.

NO QUICHE / week 12 - november 9th, 2009

roasted root quiche / week 11 - november 2nd, 2009



if we had ourselves together, we would have had rusted root playing in the background.

crust: flax seed and garlic cracks!
bottom layer: olive oil covered roasted sweet potatoes, beets and turnips with some fresh rosemary picked on our way home from the store (it grows here all year round!)
filling: 5 eggs poured over that.
topping: goat cheese!

tonight, we ate quiche seperately! this is a problem with us, finding a time when we can make quiche and not have to rush to eat it. tonight, i had to leave and meet some new volunteers at prison books and rae ate without me (i said it was ok) and then i brought a new friend home and we ate quiche - so this is isaac's first quiche :)

IT WAS REALLY GOOD. a first for the goat cheese - it didn't melt but it was really great. highly recommended.

nacho quiche / week 10 - october 26th, 2009



not yo quiche, our quiche! but it could be yours if you come over...

crust: crushed tortilla chips.
bottom layer: queso fresco. then brown in the oven!
then: a layer of salsa
filling: 5 eggs
topping: queso fresco
top topping - post bake: olives and avocados

very good. best ever! 4 thumbs up. at least.

mary's mac n' cheese / week 9 - october 19th, 2009


this week, we have a very special, poison ivy covered guest: mary!
and we made mac n' cheese quiche.



crust: those sami's flax seed and garlic crackers.
filling: 1.5 cups brown rice elbow pasta with some earth balance and .5 cups almond milk placed on top of the crust with 5 eggs poured over that.
topping: cheddar and monteray jack cheese and rice bread crumbs sprinkled on top of that!

commentary: really good but rae didn't like the cracker crust, maybe a crumbling of crackers throughout or a layer of cheese on top of the crackers if they're laid on the bottom? it was a little dry over-all, so more liquid!

breakfast quiche / week 8 - october 12th, 2009


this was to commerate our 2 month quiche anniversary.
this is a fairly traditional quiche and was made for breakfast...a first.

crust: this is a linda recipe. it's two shredded potatoes and half an onion pressed into a greased pan and baked for 25 minutes.
filling: sauteed mushrooms and garlic with wilted spinach and 5 eggs.
toppping: swiss.

the filling needed more spices/flavoring!
and the crust needed to be crunchier...

this quote illustrates how we generally eat almost all of the quiche in one sitting. even withoout guests! which is a bummer because it would be nice to have left overs...
but!
we always save a piece or two for our housemate(s) too.
and
every time we rationalize it by working through what is actually in there. quiches are filling and packed with good stuff, but when you break it down, you're not eating that much...right? right.

bad chinese food is good quiche / week 7 - october 6th, 2009

we made this one on a tuesday.
and that is because, and only because, we had to actually have chinese take out left overs first!
so on monday evening, we got chinese take out.
yum.
and tuesday we made this quiche:



crust: chow mei fun veggie noodles.
bottom layer: general tso's tofu with sauce poured over it all
filling: 5 eggs with big pieces of steamed broccoli and scallions
topping: queso fresco.

only problem here is that we ate too much of it the night before! save some tofu and sauce for the quiche! it was a really nice addition.

sushi quiche / week 6 - september 28th, 2009



a more bizarre quiche.
especially because of the cheese.
but, it was awesome.

we made these in cupcake tins so they were small like sushi!

crust: cooked brown rice pressed into tins and browned in oven
bottom layer: torn up nori
filling: 5 eggs with sauteed mustard greens and some ginger
topping: cheddar and a slice or two of a fabulous pepper from pete and maggie's farm.

seven layer bean dip quiche/week 5 - september 21st 2009


this week we made a seven layer bean dip quiche - a new spin on a classic favorite!

crust: tortillas (we just laid them flat in the pan...but they were kind of weird. as we soon learn, tortilla chips work better as a crust...)
bottom layer: refried beans
next layer: salsa
filling: 5 eggs with sauteed kale and onions
topping: cheddar

this was a fabulous quiche. who knew eggs and refried beans went sooo good together?

happy meal quiche/ week 4 - september 14th 2009



ever had smiley fries? they're quite awesome. like the goodness of mashed potatoes and french fries rolled into one. yum!
anyways, they are the rock of this quiche that is inspired by a fast food meal.

crust: pre-baked smiley fries and some just slivered and boiled potatoes because we ran out!
filling: sauteed fake meat burger (a gluten free one of course!) with caramelized onions, and 5 eggs
topping: tomato slices and yellow cheddar cheese!

side: sauteed collards

all we need is a toy...

who doesn't love a gooood pizza?
we certainly do.

this week we made pizza quiche:
crust: store bought rice flour pizza crust.
bottom layer: pesto and tomatoes and then mozzarella
filling: 5 eggs and caramelized onions
topping: more cheese!

ps for the first few quiches, all we had was this tiny pan. it was tricky to get everything in there!
pps correction, for the real first quiche we used a spring form pan and it leaked out the bottom!

rae's dream! week 2 - august 31, 2009

crust: millet and flax crackers:

they are super yummy and triangular shaped, and rounded on the edges so they fit in the pan really nicely.
filling: sauteed onions, garlic, leeks, mushrooms, boiled brussel sprouts with 6 eggs and some salt.
topping: grated swiss cheese (obviously rae's choice).

suggestions: more herbs!

our union! week 1

one night rae came over to lizzie's house. they were new friends and still learning a lot about each other. one thing that came up was that they had both been vegan and were transitioning to eating dairy and eggs. so tonight, they were fixing to make quiche. lizzie shared her magic dream about quiche and they set to work making an indian food themed quiche with what they had.

crust: crushed up spicy flavored chips
bottom layer: spicy mashed potatoes - potatoes boiled and mixed in with some yogurt (we were being super un-vegan) and cumin and chili powder.
filling: stir-fried veggies (broccoli and maybe zucchini (rae doesn't like it but maybe they didn't say anything) in coconut milk! it was way tooooo spicy because lizzie added what she thought was cumin but it was actually red pepper! so much red pepper. they coughed for like 15 minutes! lizzie was a little embarrassed. then they added the 5 eggs to the veggies and stirred it all up.
topping: mozzarella.

it wasn't too spicy in the end and it turned out really well for rae's first quiche and no recipe!

and
an ever-lasting bond was formed.
that was also the night they first talked about rae moving in to lizzie's house.
SO THEY COULD EASILY MAKE QUICHE EVERY MONDAY.

my first dream

one night, i dreamed of quiche.
it was a simple quiche. it had a crushed up corn flake crust with a layer of mashed potato. And then a 4 egg and sautéed greens filling with tomatoes and queso fresco on top.
yum!
everyone loved it.

and that's how it all began....

ALSO!
all the quiches bake at about 375 and for about 30 minutes. always test with knife to make sure they are done: no gooey-ness. no salmonella!
