i had a lasagna quiche/week #22 - January 18th, 2010



We had a rough time deciding what this weeks quiche would be. Until we remembered lizzie's amazing vegan lasagna in the fridge!

crust: lizzie's amazing vegan lasagna with spinach! just laid in the dish.
- brown rice noodle lasagna pasta, tofu and spinach and some nutmeg mixed in...just a pinch, shredded zucchini, tomato sauce, that vegan mozzarella that says it melts but doesn't really but is still good. layer and bake!
any lasagna will do.
filling: 3 eggs, 1/2 cup of almond milk and chopped, sauteed mushrooms with basil.
topping: mozzarella

baked at 350 for about 40 minutes.

Also, as you can see, we had the first warm day in a while here in Asheville. We were so grateful!

  1. This is such a fun project! You both are great, cute, and fun! I'm so excited to follow along with this...and you're inspiring me to want to make quiche.

    In other egg-related news, I put four eggs on to boil the other day. Then I promptly forgot about it. [Quite a bit] Later, Jen and I went into the kitchen to find EXPLODED EGGS EVERYWHERE!!! We had to mop the ceiling. Just a word of advice, if you didn't know already: don't boil eggs unattended, or you just may have an EGGSPLOSION.

    But, I guess that's why you bake them, instead.

  2. this is the dreamiest of quiche blog ive ever read, honestly.
    thanks yall for making something both informative and highly entertaining for me to look at on this cold rainy SF saturday. All my friends are away and im posted up here with a bad sprain. also im soooooooooo appreciative of the tissue repair salve, i think its working, i can hobble better than ever! keep doing what you do.

    Casey!! Eggsplosions sound craaazzzyyy. Lizzie is an eggs-pert hard boiled egg-er and here is what she has to say:

    so. you put water and eggs in the pot, enough water to cover the eggs and then some. then you put it on to boil and once it starts to boil then you turn it off and cover the pot and let them sit in that water for 20 minutes and then drain the water and either put in fridge or put in cold-ish water for a bit to cool down.
    DO NOT LET THEM BOIL FOR MORE THAN like 30 seconds!
