we made this one on a tuesday.
and that is because, and only because, we had to actually have chinese take out left overs first!
so on monday evening, we got chinese take out.
yum.
and tuesday we made this quiche:
crust: chow mei fun veggie noodles.
bottom layer: general tso's tofu with sauce poured over it all
filling: 5 eggs with big pieces of steamed broccoli and scallions
topping: queso fresco.
only problem here is that we ate too much of it the night before! save some tofu and sauce for the quiche! it was a really nice addition.
quote of the quiche: “bad chinese food happens for a good reason.”
ps we got a real pie dish this week!
