wow. what a quiche. so much excitement.
It was Carolyn's birthday yesterday. We invited her and Blake over for quiche night (obviously everyone's favorite night). We played lots of exciting games. Spoons, "this is a spoon!", and every 12 year old girl's favorite game.... MASH. (if you want instructions let us know!!!)
We asked Carolyn what she wanted to make. Here's what she said:
"i'm up for anything that isn't blue. i guess i am a traditionalist. potato dill? sweet potato, brown sugar, and goat cheese?"
Sooooo, we had our assignment.
crust: the amazing quiche crust:
1 cup sorghum blend
1/4 cup almond flour
1/2 tsp xanthum gum
1/2 tsp salt
1/4 tsp sugar
5 oz cold butter
1 egg
1/2 T apple cider vinegar
mix all dry ingredients. ALSO: other flours work. like once i used millet and brown rice flour instead of sorghum flour. the almond is nice, but i'm betting it can be left out and replaced with another. i don't like white rice flour, but it's your choice...experiment and work with what you got)
then add the butter, egg and vinegar
mix well with your hands
and roll out on a flat, clean and flour dusted surface (a can/jar without labels is a good rolling pin replacement)
put in greased pan and bake at 375 until a little browned, 10 minutes-ish.
(TIP: if you are also making a crusted dessert (we made a marionberry crisp) then double the recipe, divide it up, roll them out seperately and you have two crusts!)
bottom layer: mashed sweet potato with a little butter or vegan substitute. we like earth balance.
filling: just 3 eggs! and 1/2 cup almond milk.
topping: goat cheese and sprinkled cinnamon and cane sugar.
note!!! be aware that the goat cheese will sink into the filling. but, that's ok. it's still great.
375 degrees for about 30 minutes.
